Recent Recipes: Chickpea & Avocado Salad


Here at the Somars, avocados are an absolute “Somar Staple”! We love them on toast, on tacos, making fresh guacamole, Jackson eats them plain, and well, any way we can get them, we love them. With my healthy and adventurous eater, Jackson, I am always looking for new recipes that includes things he loves, as well as packs some nutritious punch! This new recipe was a little daring for the PEGS but Lauren ended up loving it! JSO3 (aka Jeff, Jess and Jackson) of course all loved it too!!!

What is great about this recipe is not only that it is easy, but provides some awesome health benefits:

Avocados

*Contain healthy fats (aka MUFAs – monounsaturated fatty acids)

*Random Fact – did you know avocado is technically a FRUIT???

*Nutrient dense, containing nearly 20 vitamins and minerals

Chickpeas – funny I sometimes call the PEGS “Chickpeas”

*Great source of plant based protein

*Helps control blood sugar levels

*High fiber, so improves digestions

*Provides essential vitamins and minerals

Let’s get to it! Make sure you give this a try while we are in ripe avocado season. It’s a great chilled dish for potlucks or even packing in your lunch. Enjoy!

Ingredients:

· 2 Ripe Avocados, cored and diced

· Lime Juice

· 1 can low sodium or no salt added Chickpeas (aka garbanzo beans), drain and rinse

· 1/3 Cup reduced fat Feta Cheese

· 1/3 Cup fresh cilantro

· 6 green onions diced

· Salt and pepper

Directions:

After you cut your avocado, cilantro and green onions, just toss everything together! Can’t get much easier than that!!
